Let’s explore some delicious and simple recipes that will delight your guests.

Easy New Year’s Appetizers with Southern Prosperity Foods

1. Pork and Black-Eyed Pea Bruschetta

Ingredients:

  • 1 baguette, sliced into 1/2-inch rounds
  • 1 cup cooked black-eyed peas
  • 1/2 cup diced cooked pork (ham or bacon works well)
  • 1/4 cup diced tomatoes
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush with olive oil.
  2. Bake for about 5-7 minutes or until lightly toasted.
  3. In a bowl, combine black-eyed peas, pork, tomatoes, olive oil, balsamic vinegar, salt, and pepper.
  4. Top each toasted bread slice with a spoonful of the mixture.

2. Mini Cornbread Muffins with Greens

  • 1 box of cornbread mix
  • 1 cup cooked collard greens, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced onion
  • 1/4 cup milk
  • 1 egg

Instructions:

  1. Preheat oven according to the cornbread mix instructions.
  2. In a bowl, prepare the cornbread batter as directed on the package.
  3. Stir in the collard greens, cheese, onion, milk, and egg until well combined.
  4. Pour the batter into a mini muffin tin, filling each cup about 2/3 full.
  5. Bake according to package directions or until a toothpick inserted in the center comes out clean.

3. Southern-Style Pork Sliders

Ingredients:

  • 1 pound pulled pork
  • 1/2 cup barbecue sauce
  • 12 slider buns
  • 1 cup collard green coleslaw mix
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon mayonnaise
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, mix the collard green coleslaw mix, apple cider vinegar, mayonnaise, salt, and pepper. Set aside.
  2. Heat the pulled pork in a saucepan over medium heat. Add the barbecue sauce and stir until combined and heated through.
  3. Assemble the sliders by placing a scoop of pulled pork on each bun bottom, topped with a spoonful of coleslaw.
  4. Top with the remaining bun half and serve warm.

4. Black-Eyed Pea Dip

Ingredients:

  • 2 cups canned black-eyed peas, drained and rinsed
  • Chopped Bacon
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions:

  1. In a food processor, combine black-eyed peas, lime juice, cumin, salt, and pepper. Blend until smooth.
  2. Transfer the mixture to a bowl and stir in the red bell pepper, green onions, and cilantro.
  3. Serve with tortilla chips or sliced vegetables.
