3 Appetizers Perfect for Summer Networking

Hosting a client party or networking event this summer? A�You can make sure your event will stand out by including some great appetizers. There is one thing all Black Southern Belles love and that is good food. Today we have some help from Hamby Catering with 3 Appetizers Perfect for Summer Networking and should be your go to for future events. They are light, easy to hold and most important, delicious! Item #1 -A�Yuca Root Chip

 

Serving Size: 30 Pieces

Yucca Root Chip Ingredients:

Edamamus (Recipe below)
Crumbled Feta Cheese
Watermelon Radish a�� cut in spears

EdamamusA�Ingredients:

8 oz. Edamamus
1/4 cup Tahini
1/4 cup Water
1/2 TSP. Lemon Zest
3 TBL. Lemon Juice
1 Garlic Glove
3/4 TSP. Kosher Salt
1/2 TSP Ground Cumin
1/2 TSP Ground Coriander
3 TBL. EVOO
1 TBL. Parsley

Edamamus Directions:

1)Place edamamus, tahini, water, lemon zest and juice, garlic, salt, cumin and coriander in a food processor

2)Puree until smooth

3)Slowly drizzle EVOO into processor while running

4)Transfer to a bowl and stir in parsley

Yucca Root Chip Directions:

1)Slice Yucca Root 1mm, fry and season with salt

2)Top with 1 tsp. of Edamamus

3)Sprinkle with crumbled Feta Cheese (optional) and garish with 2 Watermelon Radish Spears


A�#2 – Cucumber Spi Rolls

Mix all ingredients, except for cucumber slices. Toss well. Lay out cucumber slices. Mound 1/2 oz. filling at one end of cucumber. Roll filling to center and pick with a toothpick. Serve with Chili Lime Vinaigrette.

Serving Size: 38

38 Thin Cucumber Slices (1a�? x 10a�?)
3 oz. Carrots, julienne
3 oz. Red Bell Pepper, julienne
3 oz. Yellow Bell Pepper, julienne
1.5 oz. Snow Peas, julienne
1.5 oz. Scallions, julienne
1/2 cup Mint, roughly chopped
1/2 cup Cilantro, roughly chopped
1/2 Thai Basil, roughly chopped

Chili Lime VinaigretteA�
2 cup Sweet Chili Sauce
1 cup Lime Juice
1 cup Brown Sugar
1 cup Sesame Oil
3/8 cup Soy Sauce

Item #3 – Watermelon Cubes

Ingredients
Seedless Watermelon
Mozzarella Cheese Ball
Basil Leaves
Olive Oil
Kosher Salt
Balsamic Vinegar

Cut watermelon, approximently into 1/2 inch think slices
Cut slices into 1A�1 cubes
Carve out indentation into watermelon cube with spoon
Place Ciligene Ball onto indentation

Arrange on tray, drizzle with Basil Oil (see recipe below) and sprinkle with Balsamic Salt (see recipe below)

Basil Oil a�� IngredientsA�
2 cups Tightly Packed Basil Leaves
2 cups Olive Oil

Basil Oil a�� Directions
Blanch basil Leaves in boiling water and shock in ice bat
Dry to remove excess water and rough chop
Place in blender with oil and puree to smooth
Strain through cheesecloth twice
Store refrigerated until needed
Should be room temperature at time of use
(May be stored up to 1 week)

Balsamic Salt a�� IngredientsA�
35 oz. Kosher Salt
6 cups Balsamic Vinegar

Balsamic Salt a��A�Directions
Over medium heat, reduce vinegar by A? (approximately 20 minutes)
Add Kosher Salt, stir and reduce heat to low
Continue to cook until almost dry, stirring often
Pour onto a tray with pan liner place in a low oven 200 degrees and allow to dry completely (approximately 2 -3 hours)

When completely dry, process in a spice grinder until fine.

Store in container with lid closed tightly.
