Food Heritage: Easy Gumbo Recipe for Mardi Gras

Easy Gumbo Recipe for Mardi Gras

Food Heritage: Easy Gumbo Recipe for Mardi Gras

¼ cup All purpose flour

¼ cup canola oil

1 cup diced onion

½ cup diced bell pepper

½ cup diced celery

1 tsp minced garlic

3 cups beef or chicken broth

1 cup sliced andouille sausage

1 cup chicken, cooked and chopped

1 tsp onion powder

1 tsp garlic powder

1 tsp paprika

1 tsp black pepper

1 tsp cayenne pepper

1 cup sliced okra 

2 cups white rice, prepared

Sliced green onion to garnish

Directions:

in a large pot heat oil, then stir in flour to make a roux. Cook roux on medium heat until the mixture turns a rich brown (or the color of milk chocolate). Stir continuously to avoid burning.

Once roux has reached the desired color, add onions, peppers, celery, and garlic. Cook until onions begin to sweat and garlic is fragrant (about 5 mins). 

Pour in broth, and bring to a boil. Add sausage, chicken and reduce heat to simmer.  

Allow gumbo to simmer for 30 mins, ( and chicken is fully cooked) Add okra and continue cooking for 10 mins, Add spices and adjust seasoning to taste.

Serve with white rice and garnish with green onion
